Why do i call it "Vegan" Onion Soup Recipe? It's because i do not add any beef stock in my recipe. Here is my version of onion soup:
Step 1 - 1 spoonful of olive butter. Let it simmer then add in chopped onions.
Step 2 - Add in 2 big onions, 1 small onion & 2 small garlic. Obviously, chopped or sliced.
Step 3 - Add water. Lots.
Step 4 - When the water is boiling, add chopped parsley, salt, white pepper & black pepper. This trick is to replace the beef stock.
Step 5 - Turn down the fire and just let the ingredients immerse in the sea of soupilicious glory. OK i made that up. LOL!
Step 6 - When the soup is ready to be consumed, add a piece of cheese toast to top it of. Personally, i prefer Parmesan.
And voila! Your soup is ready. However, i like my soup to boil and simmer in low heat for 3 hours though.
